Seconding Star Trek Fleet Captains - it captures the theme of Star Trek so well.
And while it isn't a tactical game of ship battles, it does recreate the feeling from the movies and series, loading up special modified photon Torpedoes, self destructing your own ship etc.
All this from a single board game too.
X-Wing is all about those seat of your pants dogfights, just like in the movies.
Both these games capture their respective feelings - so it comes down to which one you are a fan of and you can always get both.
As for BattleStar Galactica, sure a game like this would work, but the ships are capable of some very erratic maneuvers in BSG - reverse thrusting backwards past pursuing ships, flipping 180 on a dime and still travelling in the same direction under inertia.
To do BSG you would need new maneuver dials and templates.
