The person who showed me X-wing didn't use the tokens and I kept forgetting that ships on both side had crit, so when i brought the game I used them and with same person he admitted it was better with them because you see what ships are limping around, to kept out reach or gun for.
But he also admitted he didn't relies what they were for as well.

And when you have lots ships in play it adds character to the battle ground and helps both sides keep track of all ships health at a glance.

Like most things about this game, it seems they're there to help speed up gameplay. They're by no means essential to the game, but they help you see, at a glance, what the "juicy targets" are from turn to turn, without having to look over all the pilot cards and then figure out which card represents which ship on the board. I love the extent to which this game is engineered around fast play, it really helps with the dogfight feel when you're not tripping over rules and such.
